Smoky & Spicy Sausage Hero’s

sausage herosThe great thing about this recipe is that its made up of ingredients that you cooked yesterday, with the roast chicken with roasted onions, capsicums and tomatoes. Being fit and healthy is all about planning and executing the plan.

So planning ahead with time management, and food preparation is a huge help on the journey to a fitter and healthier you.

If you have a busy life, make sure you plan a head as much as you can, when it comes to food and food prep.  It will make the whole week go a lot smoother.

Ingredients

  • 1 Tbsp extra virgin olive oil
  • 500 g smoked turkey sausage (I’ve also substituted chicken and herb sausages)
  • reserved roasted capsicum-onion mixture (about 1 1/2 cups) (This is leftovers, always make sure you plan your food menu’s for the week)
  • 2 wholemeal rolls (put the white bread rolls back)
  • 1/2 cup rocket lettuce
  • Chili sauce  (I use a sweet chili sauce)

Method

1. Heat the oil on medium in a large, heavy frying pan until it Shimmers. Add the sausage and cover the pan. Cook, turning the sausage links occasionally, until they’re browned and cooked through, 10 to 12 minutes.

2. Add the pepper-onion mixture to the frying pan and continue to cook until the vegetables are hot, one to two minutes.

3. While the sausage is cooking, split and toast the rolls. When everything’s ready, fill each piece of sausage and some pepper-onion mixture and rocket. Add chili sauce to taste.
