BACON WRAPPED LAMB ROULADES
Remember we always say that being fit and healthy is 80% nutrition and 20% activity. You don’t need to eat bland and tasteless meals, try this BACON WRAPPED LAMB ROULADES recipe.
Ingredients
500g (1lb ) lamb breast
Salt and pepper
50g(2.5ozs) frozen spinach, thawed and drained
1 onion finely chopped
50g ( 2ozs) ricotta cheese, crumbled
1 egg
1/2 bunch chives, snipped
2 small cloves garlic
1/2 tspn salt
1/2 tspm lemon zest
1 tspn oregano
7 slices bacon
Olive oil for frying
1-2 stalks tarragon
200mls (8fl oz) white wine
Method
Preheat oven to 220c(430f)
Pound the lamb pieces to flatten them slightly if necessary then season with salt and pepper.
Put the diced ham and spinach into a bowl.
Add the chopped onion, cheese, egg, breadcrumbs and chives.
Crush the garlic with the salt and add to the mix with the lemon zest and oregano.
Season to taste with salt and pepper and spread over the meat.
Roll up and wrap in bacon.
Heat the oil in a flameproof roasting dish and brown the meat on all sides.
Add the tarragon and roast on the middle shelf of preheated oven for 30-40 minutes, basting frequently with the white wine.
Serve immediately.
